And you can throw in whatever you like into the pasta salad to make it yours. I always need grape tomatoes, a red pepper and olives in mine. Have a favorite vinaigrette? Throw that on the pasta salad to bring it together.
Easy Pasta Salad
1 lb rotini pasta, preferably tri-color (I used a vegetable version)
1/4 c. your favorite vinaigrette dressing
2 cups of a mixture of the following (pick what you like best):
Grape tomatoes, sliced in half
Marinated or grilled mushrooms
Roasted or fresh red peppers
Sundried tomatoesMozzarella cheese
Cook the pasta according to the package’s directions. Drain and rinse with cold water.
Cut the other items into bite sized pieces if necessary. Toss them in a large bowl with the rinsed pasta. Add the vinaigrette and toss them together.
Let stand at least five minutes before serving.
This is even better after it sits in the fridge overnight.
