Summer flavors: Caprese Salad

There are a few things I could live on all summer because the foods are just perfect at this time of year. One is watermelon. Another is corn on the cob. But tomatoes, especially here in New Jersey, are perfect during the summer.

In particular, a Caprese Salad is one of my favorite things to eat during the summer. I grew up with it, and even with the lactose intolerance I developed as an adult I’m going to eat it. Everyone makes it differently, but this is how I make it. Plus try to get the freshest ingredients possible because it makes a difference. Visit your local farmers’ market to gather these simple ingredients.

Fresh mozzarella
Olive oil

Slice the tomato and the mozzarella. You want to alternate tomato with the mozzarella on a plate.

Coarsely chop the basil and sprinkle it over the tomato and mozzarella.

Drizzle olive oil over the top of the salad. Add salt and pepper to the salad to taste.

I sometimes will throw a sprinkle of garlic powder on top for an added flavor.
